THE FLUTTER OF WINGS THROUGH HISTORY 🍗
Born from late-night food in 1960s Buffalo, the “wing” has conquered the world and is celebrated on July 29. The origin story is a familiar one: at Anchor Bar, Teressa Bellissimo prepared a late-night snack for her hungry family using ingredients she had on hand at the restaurant. She tossed some extra chicken wings into the fryer and coated them in a spicy sauce. Blue cheese dip and celery on the side. Voilà , a legend was born.
When Buffalo Mayor Stan Makowski declared July 29 the official National Chicken Wing Day in 1977, it was more a local tribute to the city’s food and pub culture than an actual marketing gimmick. But the idea spread around the world, and today “hot wings” — or simply “siivet” in Finnish — have taken the world by storm.

Finland’s wing boom began on Aleksanterinkatu in Tampere in 1993, when Pekka Yli-Houhala and Harri Lehtonen turned an idea brought back from a trip to Florida into a restaurant called Siipiweikot. According to legend, the first batch disappeared so quickly that it did not even matter that the wings had been boiled in wing sauce. Only later did they realize that the wings should go through the fryer first and only then be tossed in sauce.
In just over thirty years, Siipiweikot has expanded from Helsinki to Oulu, poured tens of thousands of liters of sauce onto the menus of other restaurants, and helped make Tampere Finland’s very own “wing capital.” For many wing lovers today, wings with Siipiweikot sauce, Aura cheese dip, and an ice-cold tankard form something close to a holy trinity.

Here in Finland, National Chicken Wing Day has only truly been celebrated in a big way during the past couple of years — but all the bigger for it. In the heat of late July, Siipiweikot will once again be the place to be for wing lovers. That much we can guarantee.
